Powder for formulation control.
Pure powder can fit dry ingredient handling and allows adjustment of sweetness independently. Its water absorption and treatment must be understood. Run a controlled recipe trial rather than assuming it replaces flour, purée or flavouring in equal quantities.
Purée for a different process.
Purée adds water as well as yam solids. Its cooked state, composition and cold-chain requirements change the production plan. Compare your cost per finished batch after adjusting the recipe, thawing and waste.
Turn a good sample into a specification.
Record the approved recipe and retain reference material. Agree how later lots will be accepted and what happens if colour or texture changes.
- Measure the same ingredient dose and process each time.
- Check the baked or frozen product, not only the raw mix.
- Request microbiological and contaminant evidence appropriate to your market.
- Agree lot traceability, storage instructions and delivery acceptance.
Common questions.
Will the colour remain identical after baking?
Colour depends on the material and finished recipe. Establish an acceptance range from trials; a sample alone does not guarantee all subsequent batches.
Can I source sweetened halaya?
Describe the required composition in a project enquiry. Halaya is distinct from plain purée and may contain milk or other ingredients.
